Pizzoccheri della Valtellina P.G.I. – Short Tagliatelle
Pizzoccheri della Valtellina P.G.I. are a traditional pasta from Valtellina in the province of Sondrio and are produced according to ancient local traditions with whole buckwheat flour. They are a source of fiber.

- 320 g Pizzoccheri
 - 4 medium artichokes
 - 1 lemon
 - 120 g potatoes
 - 1 clove of garlic
 - 4 tablespoons of oil pepper, parsley, and Grana cheese
 
Preparation:
Remove the tough outer leaves, stem, and thorns from the artichokes, halve them, slice them thinly, and soak them in water and lemon. Bring salted water to a boil, add the potatoes cut into cubes, and after 5 minutes, add the Pizzoccheri. Cook for 12-15 minutes. Meanwhile, in a saucepan with oil and garlic, sauté the drained artichokes for 5-6 minutes, season with salt and pepper. Drain the Pizzoccheri, combine them with the artichokes, and sprinkle with grated Grana cheese, parsley, and pepper to taste.
