The product obtained from the extrusion and subsequent drying of dough made from durum wheat semolina, rye flour, and water.

Ingredients for 4 people:

  • 350 g of Rye Penne
  • 400 g of porcini mushrooms
  • one or two cloves of garlic
  • 70 g of olive oil,
  • salt, and pepper
  • Grana cheese to taste
  • parsley


Clean and slice the mushrooms. While you bring water to a boil for the penne, sauté the garlic in olive oil in a pan and add the mushrooms. Cook for about 10 minutes. Season with salt and pepper and sprinkle with parsley. Boil the penne in salted water for 7 minutes. Drain the pasta and toss it with the mushrooms. Add Grana cheese to taste and garnish with chamomile flowers.
